Hi Joe,
You have a couple of options. My personal fave is Wine Preserver brand nitrogen gas. You spray a blanket of the gas over the wine and it keeps it from oxidizing. However, I think there is an even better option for you. Many top wine producers are making half-bottles (375 ml) of their wines. Off the top of my head I can think of several surprises(Georis Merlot, Rauzan-Segla 2nd cru Margaux, Steele Chard and Pinot, Didier Dagueneau Pouilly-Fume and the list goes on and on and on). If they are not immediately available at your liqour store, they may be able to order a mixed case for you. This would limit waste and increase variety in your week.
