i have a jon rated for 3hp but will be recieving a 7.5hp motor(pass me down) from a cousin, have you ever put a motor with more than 3hp on a 10' jon rated for 3? who did this turn out? speed? stability?thanks

Not only is it unsafe to exceed the hp rating on a boat, but it is illegal. You could sell the 7.5 and purchase a little 3 hp. I recommend an evinrude or johnson.
