10-12 years for the Baron. Unless you like your wines younger or older, in which case you will want to drink it sooner or later.
Over the next couple of years for the Chablis.

don't hold it that long. it only gets worse if the temp fluctuates all over the place and esp if it gets too warm - 75-80 degrees in the summer, etc, in my house...
