if you have left over wine, refrigerating it will help it last a couple more days, max. however, you can also pour it back into a bottle, or maybe a half-bottle you keep around for this occassion, and recork, leave some air space in the bottle for expansion, and freeze it, believe it or not. i've heard very knowledgable wine people recommend this. it'll keep for a while that way.another thought: if you don't think you'll drink the whole bottle, decant only part of it so you don't expose all of it to air. i use a vacuum stopper for left over wine and it's fine the next day. maybe a couple days in the fridge; even red will oxidize more slowly if chilled.

you're right -- some wines don't suffer from a night of oxidation. especially young concentrated and tannic ones.i opened a stonking bottle of Mills Reef Syrah 2000 by mistake last week. after decanting, it was still impenetrable. I rebottled half the bottle, vacuum sealed it and stuck it in a cool cupboard. on the second day the tannins had receded a bit and i could taste the fruit. on the third day a bouquet began to reveal itself. on the fourth day it was superb drinking.
