A recent convert to wine, I find I could drink a bottle a night, but have limited myself to 2-3 glasses. Am I being too cautious, or am I on a slippery slope?

Slipper slope for your pocket book maybe. Depending on your tastes.My wife and I normally split a bottle.
Sometimes we will open two and drink half of each. 1.5 bottles if one of them was really good, 0.5 if neither were very good.
Part of this is because, even with the fancy resealing contraptions, the wine never tastes as good (to me) if you keep it for more than 3 days.I may be a young man, Brom, but that doesn't keep me from enjoying a 2 or 3 bottles a week. Why not every night? Well, we do not eat dinner together except for 2 or 3 times a week. :^)
Why keep track of how much wine you consume?
Why not keep track of which you like instead.
My wife and I split a bottle per night, but it is usually finished by 8:30 or so and we are left wanting more... For health and cost reasons this seems like a reasonable limit though.According to the doctors at our HMO, anything more than 2 glasses/day is unhealthy.

What "slippery slope"?I generally drink between a 1/2 and a whole bottle several nights a week - but that's because I am cutting back.
Cutting back on calories that is. I no longer eat wonderful meals each night of the week. If I did, I would drink between a half and a whole 7 nights a week.

For me, one glass at a time 3-4 days a week. Partly because of budget, partly because I don't want to build a tolerance or drink more than one glass to "relax" and start relying on it, then wanting to drink more. Three glasses is getting near low level intoxication for me but I haven't built up a tolerance.I have no authoritative advice or expertise but since it's new maybe you just really like the taste. If that's the case after a while you may be able to enjoy 1-2 glasses at a time after the initial love affair is over. Otherwise if you like the alcohol effects as well as taste, there would be the danger I would think. Can you easily go one or two nights without and not think about it - that would be a good sign I would think.

Nobody becomes a wine enthusiast for the alcohol content. The taste is 99% of the experience. Why do you think there are so many wines?

Danger of what? Enjoying yourself? Whatever you do, avoid that feeling of satisfaction and well-being after dinner.

I confess - when I am eating rice cakes and soup on Saturday, I am thinking about Tuesday's upcoming seven course meal and the wines I will choose to accompany it. Not only am I looking forward to my next glass of wine, I am almost feverishly awaiting that next 3 oz. of foie gras
If your budget constrains you to one glass of wine 3 or 4 days a week, you must be a young man. Someone has been filling your head with "substance abuse" propaganda. Shake it out - rub it off. Live in the gustatory glory that is available. To paraphrase Lazarus Long - moderation is for monks.

Last night, I opened a nice bottle of '00 Roumier Morey St. Denis Premier Cru and it was so nice that the next thing I knew, it was gone! So then I polished off the better part of a '97 Tuscan wine which I had opened for my wife (who doesn't appreciate Burgundy). I guess I'm no monk! In fact, I often "enjoy 1-2 glasses at a time", because I like to compare wines side by side.
