Does anyone know exactly what sort of effect they have, long-term or short-term? Am I gonna get the gout? Or do they end up in the porcelain pool along with my MGD?

Like many other substances, sulfites are harmful to people who are allergic to them. That's why for foods and beverages that contain sulfites indication thereof on the label is required by law.
Altho i haven't researched that much. i have seet references to it more than once.

I am curious to know about the exact effect of sulfites on the human body. The other responses are appreciated and enlightening, yet I still do not know what they do/ enable my body to do to itself? Please help if you can. Cheers!

I'm not sure if it's sulfites or what, but I'm allergic to some wines. California reds. No problems with Aussies or French reds. Those Californians turn me red as a beet.

They're everywhere! They're everywhere! People notice that sulfites are in wine. Did you know that sulfites are also added to:Additives: Food Colours: E102-155. All azo dyes contain sulphur compounds as part of their structure called sulphonilic acid
Alcoholic Beverages: Beer, wine, cocktail mixes, sparkling beverages, wine coolers
Bakery Items: Breads containing dough conditioners, cookies, biscuits, crackers, pie and pizza crusts, tortillas, waffles, fruit cakes, Christmas cakes, plum puddings, muesli bars
Beverages: Beverages containing sugar or corn syrup, fruit juices, fresh, bottled or canned, fruit juice concentrates canned bottled, and frozen fruit juices, wine,
Cereals: Those containing dried fruit, muesli
Condiments: Horseradish, relishes, pickles, olives, wine vinegar, salad dressings, lemon juice.
Dairy: Processed cheese foods, dips, fruit cheeses, cottage and cream cheese, processed yoghurt.
Dried Foods: Dried herbs and spices, dried fruits, trail mixes, fruit pie fillings, glace cherries.

I have read that the small amount of sulfites will affect only a very small number of people. I have also read that it is virtually impossible to produce good sulfite free / organic wine.Unless you are a hardcore healthfood type, I wouldn't give it a second thought.
