Just before I start, remind me why would you have a cabernet iced?
Bearing in mind your "10 seconds"..
Thank them for the wines immediately, (" Saved, after this our wine stock would have been pretty well depleated" and "we're pretty well sorted for now though, this may come in handy later".
Do you use decanters? they're brilliant for serving what you want to. If your guests are interested in wine they will soon start asking questions.
