What's wrong with opening both? Especially if the guests want something other than what you had planned. If the guests leave their wines you can always cook with the leftovers.
As a guest I never expect my wine to be opened. Especially if the host has already picked wines to match the food.
At these types of meals I open 3-6 wines so everyone has something they like.
