1998 Chardonnay

Keep for about 3 to 7 years. Longer in a cool cellar. Big structured vino.

Colour : Light gold at the moment.

Bouquet : Primary fruit character. Pear. melon, citrus. Add some nuttiness
from the French oak and the butterscotch, honey and coffee aromas from
malolactic ferment and oxidative handling. There is also an elusive,
but definite odur of WINE.

Food : Seafood - crayfish, scallops, Atlantic salmon (poached) richer
white meats like guinea fowl. Possibly roast crocodile if you
can lay hands on any about the creek.

Alcohol : 13.8%
Acidity : 7.5 g/l
pH : 3.37
