Modifying 14' Sea Nymph

I have this 14' deep V sea nymph that I love. The one problem is that it has three bench seats. I know we had some threads here before about removing the center bench seat for extra room. I just wonder if any of you have tried it before.
I also have built in storage cabinets that are made of wood. The problem is that the wood is heavy and rots over time. Do any of you know of a resource for aluminum stock that I could use to fabricate my own metal cabs? I am pretty good with design and layout, but I don't have a resource for the raw materials. Also how thick is the aluminum generally the manufacturers use when they install them.
