Can anyone explain me how the digital works at low light condition?

For example when I shoot (on digital) with long exposure (2-5 minutes or longer) then not matter what the exposition time is the result looks like shooting with a video camera at low light. (Havy grains, noise, disbalance of contrast, no Dmax and so on). I think it happens because the digital is stateless and do not â€œaccumulateâ€ the density like an analog film dose but responses for the current light condition. Is anyone can sagest how to work around this problem and how to introduce the density â€œbuild upâ€?
